- 1 can black beans,
- 1 cup frozen corn
- 1.5 cups shredded Mexican blend cheese
- 1 large bell pepper thinly sliced, optional
- 1 tsp cumin optional
- 0.5 tsp chili powder optional, for spice!
- 0.5 tsp garlic powder optional
- Salt and pepper to taste optional
- 1-2 tbsp olive oil or cooking spray
Instructions
- In a bowl, combine black beans, corn, and bell pepper. Season with cumin, chili powder, garlic powder, salt, and pepper. Toss to coat
- Lay a tortilla flat. Sprinkle cheese over one half, add a generous scoop of filling, top with more cheese, then fold in half
- Heat a skillet over medium heat with a light coat of oil. Cook quesadilla 2-3 minutes per side until golden and crispy
