Carrot Apple Millet Bites

Carrot Apple Millet Bites: A 5-Ingredient FPIES-Friendly Snack Toddlers Love

Print Recipe

Ingredients

Makes 12 bites.

  • 3/4 cup cooked mashed carrot about 2 medium carrots, steamed and mashed smooth
  • 1/2 cup unsweetened applesauce
  • 1 cup millet flour
  • 3 tablespoons pure maple syrup
  • 2 tablespoons coconut oil melted and slightly cooled

Instructions

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the mashed carrot, applesauce, maple syrup, and melted coconut oil until smooth and glossy.
  • Add the millet flour. Stir with a sturdy spoon until a soft, scoopable dough forms. It should be slightly tacky but hold together when pressed between your fingers.
  • Let the dough rest for 5 minutes. The millet flour needs this time to fully absorb the moisture, and the bites will hold their shape much better.
  • Using a small cookie scoop or a heaping tablespoon, scoop the dough and roll gently between your palms to form 12 small balls. Place them on the prepared baking sheet, leaving a little space between each one.
  • Press the tops down slightly with the back of a spoon. This helps them bake evenly and gives a nicer finished look.
  • Bake for 18 to 20 minutes, or until the edges are set and the tops feel firm to the touch.
  • Let the bites cool on the pan for 5 minutes, then transfer to a wire rack. They firm up beautifully as they cool, so resist the urge to taste test too early.
